Waxed or Vacuum-Packed Bottarga?

Wax and vacuum film do the same job, protecting a cut-able surface from air, by opposite means. Neither is a grade. Knowing what each is for makes it easier to read a shelf.
What the wax is doing
A wax coating is a physical barrier applied to the outside of a finished lobe. It slows further drying, protects the surface during handling and transport, and lets a large piece be opened, used and returned to over time, because you only ever expose the part you are cutting. Traditional practice in some places uses beeswax; the exact composition is a producer detail, so check the label rather than assuming.
What the vacuum pack is doing
Vacuum packing removes the air around the lobe instead of coating it. That protects a smaller piece efficiently and keeps it in the condition it left the workshop in, but it is a single seal: once you open it, the packaging has done its work and the piece needs wrapping and cool storage from then on.

Cutting a waxed lobe
- 01Chill the lobe briefly so it firms up and the wax is less inclined to smear.
- 02Score and lift the wax from one end only, a band slightly wider than the slices you want.
- 03Cut what you need with a long thin knife, at a slight angle to the lobe.
- 04Wrap the exposed face closely and return the piece to the cold, leaving the rest of the wax in place.
Which to buy
If you want a piece for the table, for gifting, or for regular use over weeks, a waxed lobe is designed for exactly that. If you want a manageable first purchase or a piece you will work through fairly promptly, vacuum-packed is the sensible choice. In both cases the more informative things on the pack are species, origin, weight, storage instructions and date.
